JAG Hotel is a boutique hotel, best known for its musical theme, and is located on George Street West, one of North America’s best-known entertainment districts. The musical theme, feel, and mood are felt throughout the new expansion with its décor and pops of art. Connected by a pedway, the hotel has a total of 169 rooms. A new lounge with 140 seats will be added and the existing restaurant will be expanded to 120 seats. It will host a high-end wellness and fitness center, coffee shop, lap pool, and a luxurious VIP floor with a lounge. The hotel has a state-of-the-art two-story multi-purpose venue able to accommodate banquets of up to 600, receptions of up to 1,000, and concerts of up to 1,500. A great enhancement to the arts and entertainment in the downtown St. John’s area.
JAG Hotel is looking for an experienced Executive Chef who is a dynamic leader with the ability to motivate others, to join our senior management team.
As the Executive Chef, you will play a pivotal role in shaping and executing the culinary vision of our organization. Leading a team of talented chefs, you will be responsible for maintaining the highest standards of culinary excellence, consistency, and creativity. From menu development and food quality assurance to kitchen operations management and staff training, you will drive innovation, efficiency, and profitability in our culinary operations.
Duties and Responsibilities:
- Develop and refine culinary concepts, menus, and recipes that reflect current culinary trends, market demand, and brand identity.
- Lead menu planning, labour costs, and cost control initiatives to optimize profitability while maintaining exceptional dining experiences.
- Collaborate with the restaurant manager, Executive Chef for Exile and Banquets, sous chefs, and other key stakeholders to ensure seamless execution of culinary initiatives and alignment with overall business objectives.
- Provide guidance, training, and mentorship to culinary teams to foster a culture of creativity, excellence, and continuous improvement.
- Conduct regular audits and inspections to assess kitchen performance, food quality, and compliance with regulatory standards.
- Source and manage relationships with vendors, suppliers, and purveyors to secure high-quality ingredients and resources at competitive prices.
- Stay abreast of industry trends, culinary techniques, and best practices to drive innovation and maintain our competitive edge in the market.
- Lead Human Resource initiatives for the department including, recruitment, performance reviews, progressive discipline, and promotion
- Coordination with Maintenance department and Food and Beverage Manager regarding repairs and warranty of equipment
- Serve as a brand ambassador for JAG at culinary events, industry conferences, and media engagements.
- Complete weekly/monthly inventory count/control
Qualifications, Skills, and Attributes:
- Proven experience of at least 10 years as an Executive Chef in a multi-unit hospitality or restaurant group, preferably with a diverse portfolio of culinary concepts.
- Red Seal Occupational Standard is required
- Proficiency in kitchen management software, inventory management systems, and MS Office Suite.
- Experienced in food costing, menu execution, inventory control
- Strong leadership skills with the ability to inspire and motivate teams to achieve excellence.
